Chicken Tortilla Soup - featuring Chip Magnet

- 1 pound chicken, boiled in chicken broth until cooked thoroughly; then shredded finely.

- 1 Quart chicken broth

- 1 cup each diced onions, red peppers, green peppers and celery (optional, but really good)

- 1 Tbs flour 1 16 oz jar Sauce Appeal® Taco Sauce

- 16 oz heavy cream

- 8 oz cheddar cheese, shredded

- Butter

In a large dutch oven, saute the onions, peppers and celery in butter until transparent. Add the flour, stirring to make a paste. Slowly add broth and stir continuously to prevent any lumps. Add chicken and taco sauce and simmer on medium heat until heated through. Right before you are ready to serve, add the heavy cream and cheddar cheese. Make sure the cheese melts, but do not allow the soup to boil or it will curdle the cream. To serve, top with crushed corn chips, avocado, sour cream, Sauce Appeal® Jalapeno or Sauce Appeal® Serrano or Chip Magnet® Salsa Verde, additional shredded cheese and a squirt of lime juice.

Wheat Berry Waldorf Salad

Delicious spring salad recipe right from our very own chef!

Ingredients

  • 2 cups uncooked wheat berries
  • 1 cup chopped walnuts
  • 2 medium apples, cored and chopped
  • 1 cup seedless cranberries
  • 1 cup finely chopped parsley (flat Italian)
  • 1/4 cup apple cider vinegar
  • 1/2 cup apple juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 bunch chopped green onions

Directions

Put wheat berries into a large bowl, c over with at least 2” of water and set aside to let soak for 6 to 8
hours or overnight.  Drain well.

In a medium pot, bring 7 cups of water to a boil.  Add wheat berries, reduce heat and simmer, uncovered, for about 50 minutes, or until cooked through. (Wheat berries retain a firm, chewy texture when cooked.) Drain and set aside to cool.

Transfer cooked wheat berries to a large bowl.  Add walnuts, apples, raisins, parsley, vinegar, apple
juice, salt, pepper, nutmeg, cinnamon, olive oil, and lemon juice.  Mix thoroughly.
